In wintertime all parts of the plant above ground die and every spring
Origanum vulgare hirtum sprouts again from the root giving shoots with leaves and flowers that open in July. That’s when we pick and distill it, taking special care in its transportation since it is very prone to start decomposing even a couple of hours after cut.
